Chef Bernard grew up on Vancouver Island and knew before he left school that he was going to be a chef. After the realization that a professional soccer career was unlikely, he chose cooking as his career path and graduated in 1976 from the Culinary Arts Program at Malaspina College with the distinction of “most outstanding student’. He became one of the first chefs from BC to earn the highest qualification of Certified Chef de Cuisine (in 1986). He was chosen as the executive chef for the Canadian Club for Expo’86, where he dazzled foreign dignitaries and celebrities including Princess Diana, Prime Minister Margaret Thatcher, and George Burns with his innovative use of local and regional dishes (revolutionary at the time).
He was the first West Coast-born and trained chef to represent Canada in the Bocuse d’Or Competition, in France. He is a member of the BC Restaurant Hall of Fame and CCFCC Honour Society.

He moved to Whistler in 1989 to become the executive chef at the newly-opened Chateau Whistler Resort. Chef Bernard is considered to have played an important role in turning Whistler into a culinary destination. After eight years at the Chateau, he left to open his own restaurant, Chef Bernard’s Cafe, in the Upper Village and was voted Best Chef in Pique Newsmagazine’s Best of Whistler for multiple years. Part of what made Chef Bernard (or “Cheffie” as one article referred to him) so popular was his support for the local farming community and belief in using fresh and local ingredients, many from the Pemberton Valley. In 1993, he was one of the founders of the Whistler Farmers’ Market, and he was also the founding chef of Whistler Search and Rescue’s Wine’d Up fundraiser. He and his wife, Bonnie, moved to the Okanagan in 2006, becoming Executive Chef at the Sonora Room at Burrowing Owl Winery, later moving to Wild Apple Restaurant and Lounge in Kelowna. He joined Okanagan College in 2014 as Culinary Manager of the Wine, Food and Tourism program. Bernard Casavant joined the RauDZ Creative Concepts Ltd team in spring 2018 as Executive Director of Operations, overseeing four restaurants in the Okanagan region. He volunteers with Chefs in the Classroom, an organization which aims to teach and inspire children to cook.

He is recognized as one of the pioneer chefs who received their culinary education and training in Canada, challenged the European-only executive chef status quo, and helped achieve a Canadian culinary identity grounded in dishes inspired by local and regional produce.
